Strawberry and yoghurt pots with elderflower honey
Biscuit crumbs, honeyed Greek yoghurt and strawberries steeped in honey, in layers. A no-bake dessert that works for breakfast too.

Strawberry and elderflower are a classic pair, and here the honey stays raw, never heated, so it keeps its floral aroma. You'll need about 80 g of honey.
For a different flavour: Acacia honey – more neutral, letting the fruit take the lead.
Ingredients
- 80 ghoney (about 4 tbsp: 2 for the yoghurt, 2 for the strawberries)(Honey with elderflower)
- 500 gGreek yoghurt
- 400 gstrawberries
- ½lemon, juiced
- 100 goat biscuits
- 30 gmelted butter
- 100 mlwhipping cream, lightly whipped (optional)

Method

Dice the strawberries, toss them with 2 tbsp honey and the lemon juice, and leave for 10 minutes to release their juice.

Crush the biscuits and mix them with the melted butter.

Stir the yoghurt with the remaining 2 tbsp honey until smooth; if you're using whipped cream, fold it in.

Layer into glasses: biscuit crumbs, yoghurt cream, honeyed strawberries, then yoghurt and strawberries once more.

Chill for at least half an hour before serving.
