Ginger and lemon tea with honey
A lemony winter tea brewed with fresh ginger, with the honey going in only once it's cool enough to drink. A jugful for cold evenings.

A honey that suits a warm winter drink, and because it only goes into the tea once it's lukewarm, it keeps its flavour and aroma. You'll need about 80 g of honey.
For a different flavour: Chestnut honey – gives a stronger, bolder-flavoured tea.
Ingredients
- 80 ghoney (about 4 tbsp, 1 per mug)(Honey with propolis)
- 1 lwater
- 4–5 cmfresh ginger
- 1lemon
- 1cinnamon stick and 2–3 cloves (optional)

Method

Peel the ginger and cut it into thin slices.

Bring the water to the boil, add the ginger and spices, and simmer gently for 10 minutes.

Strain, and let it cool until it's comfortable to drink.

Stir in the honey and the lemon juice, and serve straight away.
