The honey we recommend for this recipe: Wildflower honey
Its full, rich flavour goes well with cinnamon and cloves, and it's fine if it has crystallised, because it melts in the warm juice. You'll need about 60 g of honey.
For a different flavour: Pine honey – gives a darker, resinous, properly wintry flavour – you'll need a little less.
Ingredients
- 60 ghoney (about 3 tbsp)(Wildflower honey)
- 1 litre100% apple juice
- 1orange, sliced into rounds
- 1cinnamon stick
- 4–5cloves
- 1–2star anise (optional)
- 2–3 cmfresh ginger, sliced (optional)

Method
- 1
Pour the apple juice into a pan and add the orange slices and spices.
- 2
Warm it over a low heat and keep it just below a simmer for 10–15 minutes, without boiling, so it takes on the flavour of the spices.
- 3
Take it off the heat, strain it and let it cool until it's comfortable to drink.
- 4
Stir in the honey, taste, and serve in mugs with a slice of orange.
